This classic stir-fried chicken dish is an excellent introduction to techniques for producing a flavorful dish with aromatics that are just cooked enough to flavor the dish, tender meat, and crisp veggies.

Ingredients

Marinated Chicken:

  • 1 egg white
  • 1 Tbsp. low-sodium soy sauce
  • 2 Tbsp. sherry
  • 1 Tbsp. cornstarch
  • 1 lb. chicken breast, sliced

Lemon-Ginger Sauce:

  • 1 Tbsp. low-sodium soy sauce
  • 6 Tbsp. sherry
  • 2 Tbsp. cornstarch
  • ½ cup low-sodium chicken stock
  • ¼ cup lemon juice
  • Zest of 1 lemon
  • 2 tsp. sesame oil
  • 1 Tbsp. sugar
  • 1 Tbsp. grated ginger

Stir-Fry:

  • ⅓ cup canola oil, divided
  • 1 lb. snow peas
  • 1 Tbsp. grated ginger
  • 2 cloves garlic, minced
  • 3 scallions, whites only, minced

Directions

  1. Whisk together marinade ingredients and toss with chicken. Marinate in the refrigerator while you prepare the remaining ingredients (20 minutes).
  2. Whisk together sauce ingredients. Set aside.
  3. Heat all but 1 tablespoon of oil to a wok or large skillet over medium-high. Cook marinated chicken until barely white (1 minute). Remove from pan with a slotted spoon and transfer to a bowl.
  4. Wipe out the pan. Add remaining oil and heat until smoking. Add snow peas and cook, stirring, until lightly charred (30 seconds).
  5. Return chicken to the pan and toss to combine. Add ginger, garlic, and scallions, tossing and stirring until chicken is cooked through and vegetables are just barely tender (30 seconds).
  6. Pour sauce into the pan and toss to coat. Cook until sauce is just thickened (30 seconds).
