Leftover Turkey Tomato Sauce - 1 Guiding Stars

Instead of the usual turkey soup after Thanksgiving, try this quick dish and serve it over your leftover rolls, biscuits, or potatoes.

Ingredients

  • 2 tsp. olive oil
  • ½ cup diced onion
  • 2 garlic cloves, minced
  • 1½ cups crushed tomatoes
  • 2 Tbsp. red wine
  • 2 tsp. minced fresh oregano
  • 3 cups leftover cooked turkey, chopped
  • 2 Tbsp. minced fresh basil
  • 2 Tbsp. capers
  • ½ batch Guiding Stars Soft Whole-Wheat Dinner Rolls

Directions

  1. Heat the oil in a large skillet over medium-high heat. Add the onion and sauté for 5 minutes. Add the garlic and sauté for 2 more minutes. Add the crushed tomatoes and wine. Bring to a boil.
  2. Lower the heat and simmer for 10 minutes. Add the remaining ingredients and simmer for 5 minutes.
  3. Serve over rolls.
