Nothing’s simpler or more comforting than a bowl of high-quality, homemade soup. Right after Thanksgiving, when the turkey carcass is picked mostly clean, is the perfect time to make an inexpensive and soothing meal. If you love dumplings, trying adding a serving of reheated whole grain stuffing to the bottom of each bowl right before you serve the meal.

Ingredients

  • 2 quarts low-sodium chicken stock
  • Bones from 1 roasted turkey
  • 2 bay leaves
  • 2 sprigs thyme
  • 1 large onion, sliced
  • 2 medium carrots, diced
  • 3 ribs celery, sliced
  • 3 cups leftover turkey meat, chunked
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 3 tablespoons chopped fresh parsley leaves

Directions

1. Combine stock, bones, bay leaves, and thyme in a large stockpot. Bring to a boil, reduce to a bare simmer and cook for 1 hour.

2. Strain broth into a saucepan and discard bones and herbs. Add vegetables and bring to a simmer. Cook until vegetables are just tender. Stir in meat and season. Stir in parsley and serve.
