A perfectly balanced dessert, this creamy, rich, heart-healthy avocado mousse is served over simple rice cakes for just a touch of crunch. The light sweetness of stevia is balanced by the tang of lime for a key-lime pie experience you won’t have to feel guilt about.


  • 1 avocado
  • Juice from 3 Key limes
  • Zest from 1 Key lime
  • ¾ tsp. stevia powder
  • ½ tsp. vanilla extract
  • pinch salt
  • 6 unsalted plain brown rice cakes

Optional Garnishes*:

  • 3 Tbsp. unsweetened, shredded coconut


  1. Mash the avocado with a fork or food processor until smooth.
  2. Stir in lime juice, zest, stevia, vanilla extract and salt until combined.
  3. Cover with plastic wrap and chill for about an hour.
  4. Spread mousse on rice cakes and sprinkle with coconut, if desired.
