Ingredients

  • ⅓ cup couscous
  • ½ cup boiling water
  • 2 tsp. canola oil
  • ½ cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1 tsp. thyme
  • 1 tsp. curry powder
  • ½ tsp. cumin
  • ½ tsp. allspice
  • ½ tsp. ginger
  • ½ tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. paprika
  • ⅛ tsp. cayenne pepper
  • 12 oz. 99% lean ground turkey
  • 4 whole-wheat hamburger buns
  • 4 tomato slices
  • 4 lettuce leaves

Directions

  1. Combine couscous and water. Let stand until tender (5-10 minutes).
  2. Heat oil in a small skillet over low heat. Add bell pepper, garlic, herbs, and spices. Cook, stirring, until the bell pepper is slightly softened (1-2 minutes).
  3. Prepare a grill or preheat the broiler to high.
  4. Mix turkey, couscous, and bell pepper thoroughly. Shape into four ¾” thick patties. Grill or broil the patties, turning once, until they reach a minimum internal temperature of 165ºF (5 minutes per side).
  5. Build burgers on buns with tomato and lettuce.
