The key to turning a simple veggie stir fry into a solid meal is serving the veg mix with whole grains like brown rice or quinoa. Offer this dish with soy sauce to allow your family to add only as much flavoring as they like.

Tip: If you serve it over instant brown rice, the rice and veggies can easily be ready in the same amount of time.

Ingredients

  • 2 tsp. canola oil
  • ¾ cup snow peas
  • ¼ cup sliced red onion
  • 1 cup sliced bell pepper
  • 1 cup sliced mushrooms
  • 1 cup broccoli florets
  • 1 cup shredded cabbage
  • 1 Tbsp. low-sodium soy sauce
  • ¼ tsp. ginger
  • ¼ tsp. garlic
  • Pinch of crushed red pepper flakes

Directions

  1. Heat oil in large skillet over medium-high. Add vegetables, soy sauce, ginger, garlic, and crushed red pepper flakes. Cook until vegetables are just tender (4-5 minutes).
  2. Serve hot.
