Patty pan squash are a seasonal delicacy that should be available right about when you’re looking for something newly exciting to put on your grill. Seasoned with Indian spices, this dish will wake your palate up again.

Ingredients

  • 1 Tbsp. olive oil
  • 1 tsp. grated, peeled, fresh ginger
  • ½ tsp. salt
  • ½ tsp. ground coriander
  • ¼ tsp. ground cumin
  • 1 lb. baby patty pan squash, cut in half crosswise
  • 1 medium red onion, cut into 1" pieces
  • Cooking spray
  • 1 Tbsp. fresh lemon juice
  • 1 Tbsp. thinly sliced fresh mint leaves
  • 8 (10") Skewers

Directions

  1. Preheat grill.
  2. Combine first 7 ingredients in a large bowl; toss well.
  3. Thread squash and onion alternately onto each of 8 (10″) skewers.
  4. Place skewers on grill rack coated with cooking spray; grill until tender, turning frequently (10 minutes). Drizzle with lemon juice and sprinkle with mint.
