Heirloom Tomato Salad with Tomato Granita - 2 Guiding Stars

Frozen granita made from pureed tomatoes add both texture and flavor to this basic salad. Make this in summer when tomatoes are at their local, sun-ripened best.

Ingredients

Granita:

  • 1 Tbsp. red wine vinegar
  • 2 tsp. extra virgin olive oil
  • ¼ tsp. kosher salt
  • 8 oz. seeded, peeled, heirloom tomatoes

Salad:

  • 4 assorted heirloom tomatoes, cut into ¼" slices (about 2 lb.)
  • ½ tsp. freshly ground black pepper
  • ¼ tsp. kosher salt
  • 2 Tbsp. thinly sliced fresh basil

Directions

  1. To prepare granita, place vinegar, olive oil, 1/4 teaspoon salt, and seeded peeled tomatoes in a blender or food processor; process until smooth.
  2. Place tomato mixture in an 8″ square baking dish; cover and freeze until firm, stirring twice during first 2 hours. Remove mixture from freezer; scrape the entire mixture with a fork until fluffy.
  3. To prepare salad, arrange tomato slices on a platter. Sprinkle tomatoes with pepper and 1/4 teaspoon salt. Top with granita. Sprinkle with basil.
