Stuffed mushrooms are a great vegetarian dish that work well on the grill or under a broiler. Quick to cook, quick together, filling, and delicious: this is a recipe that’s well worth learning.

Ingredients

  • 2 Tbsp. lemon juice
  • 2 tsp. low-sodium soy sauce
  • 1 tsp. olive oil, divided
  • 4 large portobello mushroom caps
  • ⅔ cup chopped tomatoes
  • ¼ cup shredded part-skim mozzarella cheese
  • ½ tsp. finely chopped fresh rosemary
  • ⅛ tsp. pepper
  • 1 clove garlic, chopped
  • 2 tsp. minced fresh parsley

Directions

  1. Preheat grill to medium.
  2. Whisk together juice, soy sauce, and half of the oil in a small bowl. Remove mushroom stems and brush oil mix over both sides of mushroom caps.
  3. Place the mushroom caps, stem sides down, on grill rack. Grill until soft, turning halfway through (10 minutes).
  4. While mushrooms are cooking, combine the tomato, cheese, remaining half of the oil, rosemary, pepper, and garlic in a small bowl.
  5. Divide tomato mixture between mushrooms. Cover and grill until cheese is melted (3 minutes). Sprinkle with parsley to serve.
