The only meat yummier than a perfectly grilled steak is a marinated steak topped with a wonderfully balanced salsa. This mango salsa will set you tastebuds dancing, playing perfect counterpoint to simple couscous and fresh peas.

Ingredients

Marinated Steak:

  • ¼ cup lime juice
  • 2 Tbsp. minced green onion
  • 2 Tbsp. water
  • 1 Tbsp. vegetable oil
  • 2 tsp. minced fresh ginger
  • 2 cloves garlic, minced
  • ⅛ tsp. salt
  • 1 lb. top round beef steak

Mango Salsa:

  • 1 mango, diced
  • 2 Tbsp. minced green onion
  • 1 Tbsp. lime juice
  • 1 Tbsp. fresh cilantro
  • 1 red jalapeno pepper, chopped

Couscous:

  • 4 cups cooked couscous
  • 2 cups sugar snap peas, steamed

Directions

  1. Whisk together marinade ingredients and place in a sealable plastic bag with steak. Marinate in the fridge for at least 6 and up to 12 hours.
  2. Just before grilling, combine salsa ingredients. Cover and refrigerate until ready to serve.
  3. Remove steak from marinade and discard marinade. Preheat grill to medium-high and cook steak for 4 minutes. Flip and cook until desired doneness is reached.
  4. Slice steak and serve with salsa, couscous, and sugar snap peas.
