A little steak is a delightful treat, and a crisp bed of greens and veggies shows it off to perfection. An easy spice rub plays off a simple vinegar and oil dressing of the salad for a robust flavor all around.

Ingredients

Spice Rub:

  • 1 Tbsp. chili powder
  • 2 tsp. oregano
  • 1 tsp. thyme
  • ½ tsp. salt
  • ½ tsp. onion powder
  • ½ tsp. garlic powder
  • ¼ tsp. pepper

Steak Salad:

  • 1 lb. lean boneless sirloin tip steak
  • 8 cups spring-blend salad greens
  • 1½ cups bell pepper strips
  • 1 cup sliced red onion
  • 1 Tbsp. chopped fresh parsley
  • 1 Tbsp. red wine vinegar
  • 1 tsp. olive oil
  • 1 tsp. lemon juice
  • 1 (8¾ oz.) can whole-kernel corn, drained and rinsed

Directions

  1. Combine spice rub ingredients. Rub over all sides of meat.
  2. Heat a nonstick grill pan over medium-high heat. Cook steak to desired doneness, flipping once (4-8 minutes per side).
  3. While steak cooks, combine salad greens and remaining ingredients in a large bowl. Toss well to coat.
  4. When the steak is done cooking, cut across the grain into thin slices. Top salad with steak to serve.
