Grilled Eggplant - 1 Guiding Stars

This fresh dish uses grilling to bring out the best flavor and texture in eggplants. Topped with a simple tomato salad, this is a light summer side that will be welcome at any picnic table.

Ingredients

Tomato Topping:

  • 3 cups diced tomatoes
  • 1 Tbsp. minced garlic
  • ½ cup sliced fresh basil
  • ¼ tsp. crushed red pepper flakes
  • 2 Tbsp. olive oil

Grilled Eggplant:

  • 2 medium eggplants, sliced into ½" rounds
  • 1 Tbsp. olive oil
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ½ lb. low-fat mozzarella cheese, sliced

Directions

  1. Preheat grill to medium-high.
  2. Toss all topping ingredients together.
  3. Brush eggplant generously with olive oil on both sides. Season with salt and pepper. Grill eggplant slices, covered, until eggplant is well-browned on one side (3-4 minutes). Flip slices and top each with one slice of mozzarella. Cover and grill until cheese is melted and eggplant is tender (3-4 minutes).
  4. Transfer eggplant to a serving platter and top with tomato mixture.
