This veggie sandwich is the perfect vegetarian option for a summer cookout. It’s both delicious and packed with nutrition!


  • 1 clove garlic, mashed into paste
  • ¼ cup light mayonnaise
  • 1 tsp. lemon juice
  • 1 eggplant, thickly sliced
  • 2 portobello mushroom caps
  • Cooking spray
  • ½ tsp. salt
  • ½ tsp. pepper
  • 4 Guiding Star-worthy whole-wheat sandwich rolls
  • 2 cups arugula
  • 1 large tomato, sliced


  1. Preheat grill to medium-high.
  2. Stir together garlic, mayonnaise, and lemon juice in a small bowl. Set aside.
  3. Coat both sides of eggplant rounds and mushroom caps with cooking spray and season with salt and pepper. Grill the vegetables, turning once, until tender and browned on both sides (3-4 minutes per side). Slice the mushrooms.
  4. Spread the garlic mayonnaise on the sandwich rolls and then layer on the eggplant, mushrooms, arugula and tomato slices.
