This Caribbean-influenced chicken will inspire your tastebuds and leave you imagining ocean breezes. Add a mix of your favorite veggies to the broiler pan and serve with a side of whole grains to round out the meal.

Ingredients

  • ¼ cup orange juice
  • 1 tsp. orange zest
  • 1 Tbsp. olive oil
  • 1 Tbsp. lime juice
  • 1 tsp. minced fresh ginger
  • 2 garlic cloves, minced
  • ¼ tsp. hot sauce
  • ½ tsp. oregano
  • 1½ lbs. boneless, skinless chicken breasts, halved

Directions

  1. In a blender, combine all ingredients except the chicken. Place the chicken in a freezer bag and with the marinade. Marinate in the refrigerator (2-24 hours).
  2. Remove chicken from bag and discard marinade. Place the oven rack at the highest position. Broil the chicken on high until it reaches a minimum internal temperature of 165ºF, turning once (6 minutes per side).
