Spinach acts as a base for a rich green dressing in this delightful side dish, helping to coat potatoes with both flavor and color. When you struggle to get enough green vegetables into your family, every little bit counts.



  • 2 cups spinach
  • ½ Tbsp. rosemary
  • 2 Tbsp. water
  • 2 tsp. tahini
  • 1½ Tbsp. olive oil
  • 1 Tbsp. lemon juice
  • 1 clove garlic
  • ½ tsp. salt


  • 4 cups scrubbed and halved fingerling potatoes


  1. Preheat oven to 400ºF.
  2. In a food processor, purée dressing ingredients until smooth.
  3. Toss potatoes with dressing and spread in single layer on a baking sheet. Bake until tender and lightly browned (30-35 minutes).
