This easy recipe makes a fantastic summertime side dish. Use whatever seeds is most convenient–pepitas would also work well.

Tip: If you’re not a fan of raw onion, make this a skillet dish and start by frying the onions until soft.

Ingredients

  • 1 lb. green beans, trimmed
  • ¼ cup chopped onion
  • 2 garlic cloves, minced
  • ½ tsp. salt
  • Pepper, to taste
  • Red pepper flakes, to taste
  • 2 Tbsp. sunflower seeds
  • 1 tsp. chopped fresh oregano

Directions

  1. Place the beans in a saucepan. Cover with water and bring to a boil; reduce the heat to a simmer, and cook until tender (7-8 minutes).
  2. Drain beans. Toss remaining ingredients to serve.
