Ingredients

  • 4 Tbsp. olive oil
  • 1½ cups onion, minced
  • 1 Tbsp. garlic, minced
  • 1 Tbsp. brown sugar
  • 1 tsp. kosher salt
  • 1 tsp. garam masala
  • 2 tsp. ginger
  • ½ tsp. coriander
  • ½ tsp. cinnamon
  • ½ tsp. mustard seeds
  • 2 cups tomatoes, chopped
  • ½ cup low-sodium vegetable broth
  • 1½ lbs. green beans, trimmed

Directions

  1. Warm oil over medium-high heat in a large pot. Stir in the onion and cook until tender, 5 minutes.
  2. Stir in garlic, sugar, salt, garam masala, ginger, coriander, cinnamon, and mustard seed. Cook until seeds pop, 1 minute.
  3. Stir in the tomatoes and broth. Bring to a simmer and add beans. Reduce the heat to low, cover, and simmer until beans are cooked.
