Protein bars can be expensive, and many of them are filled with artificial ingredients we often prefer to avoid. These simple bars are cheap, tasty, easy to make and if you have to avoid gluten, they’ll be a welcome addition to your recipe repertoire.

Ingredients

  • 1 cup dry quinoa, cooked
  • 1 cup buckwheat flour
  • 1/3 cup unsweetened coconut flakes
  • 1/3 cup sunflower seeds, no salt
  • 1/3 cup raisins
  • 1/2 cup chopped dates
  • 2 tablespoons canola oil
  • 3 tablespoons unsweetened applesauce
  • 1/4 teaspoon salt
  • cinnamon, cloves or nutmeg to taste
  • 1 cup skim milk

Directions

  1. Preheat oven to 350 Degrees Fahrenheit. Mix all ingredients to form a thick batter.
  2. Spread thinly over an 11×15 baking sheet lined with parchment paper.
  3. Bake for 30 minutes. Cool and cut into 24 pieces.
