Rice noodles, sometimes called glass noodles, contain no gluten, making them a perfect carb for a quick stir fry if you’re cooking with gluten sensitivities in mind. If you can’t find a soy sauce labeled as “gluten free,” look for low-sodium tamari.

Ingredients

Dressing:

  • ¼ cup water
  • 1 Tbsp. gluten-free low-sodium soy sauce
  • 3 Tbsp. natural peanut butter
  • 1 tsp. grated ginger
  • ½ Tbsp. Sriracha
  • Zest of 1 lime

Stir Fry:

  • 1 (8 oz.) pkg. rice noodles
  • 2½ Tbsp. sesame oil, divided
  • 1 (15 oz.) pkg. smoked tofu, cubed
  • 1 cup unsalted roasted peanuts
  • ½ cup snow peas
  • ¾ cup chopped asparagus
  • 2 carrots, thinly sliced
  • ¼ cup soybean sprouts
  • ⅓ cup chopped scallions
  • ¾ cup broccoli florets

Directions

  1. Whisk together dressing ingredients.
  2. Prepare noodles according to package directions. Toss with dressing and set aside.
  3. Heat 1 tablespoon sesame oil in a large frying pan over medium-high heat. Sauté tofu and peanuts until browned (5-7 minutes). Remove from pan.
  4. Add remaining 1 tablespoon sesame oil and sauté vegetables, stirring often, until just tender (4-5 minutes). Combine veggies with tofu and peanut mixture.
  5. To serve, top dressed noodles with hot stir fry.
