Ingredients

Vinaigrette:

  • Juice of 1 lemon
  • ¼ cup olive oil
  • 1" fresh ginger, peeled and grated
  • ¼ tsp. salt
  • ¼ tsp. pepper

Salad:

  • 1 cup quinoa
  • 2 scallions, sliced
  • 1 small red onion, chopped
  • 1 bell pepper, chopped
  • 1 large cucumber, chopped
  • 1 avocado, chopped

Directions

  1. Whisk together the vinaigrette ingredients.
  2. Cook quinoa according to package directions.
  3. Toss all ingredients together and dress with vinaigrette. Serve warm.
