The green beans are quickly boiled until tender but still crispy and then submerged in an ice bath to stop the cooking process and keep them looking bright and green. Paired with the great flavors of garlic and herbs, these beans making a stunning side for any meal.

Tip: If you want to make these quickly for an event, blanche the beans (boil and cool) and store in the fridge until you’re ready to fry them up.

Ingredients

  • 2 lbs. green beans, trimmed
  • 3 Tbsp. olive oil
  • 3 Tbsp. minced garlic
  • 3 Tbsp. chopped fresh parsley
  • 1 Tbsp. chopped fresh tarragon
  • ½ tsp. salt
  • Pepper to taste

Directions

  1. Bring a large pot of water to a boil. Place a large bowl of ice water next to the stove.
  2. Add the green beans to the boiling water and cook until tender-crisp, about 4 minutes.
  3. Transfer the beans with a slotted spoon to the ice water to cool. Drain well when completely cool. Stop at this step if you’re blanching the beans in advance for later frying.
  4. Heat oil in a large skillet over medium heat. Add garlic and cook, stirring constantly, until fragrant (30 seconds). Add the green beans, parsley, tarragon, salt, and pepper and cook, stirring, until heated through (1-3 minutes).
