Garlicky Baked Potato Soup - 1 Guiding Stars

As fall creeps around the corner, we all start to crave a good, cozy bowl of soup. The trick to this soup is to leave the skins on the potatoes: not only do you preserve the nutritional value of the skins, the skins bring an extra depth of flavor and texture.

Ingredients

  • 5 lb. russet potatoes, diced
  • 1 medium yellow onion, diced
  • 10 cloves of garlic, minced
  • 1 tsp. salt
  • 64 oz. (8 cups) low-sodium chicken broth
  • 8 oz. low-fat cream cheese, softened

Directions

  1. Add potatoes, onion, garlic, salt, and chicken broth to slow cooker.
  2. Cook on HIGH for 6 hours.
  3. Add the softened cream cheese and puree soup with an immersion blender until the cheese is incorporated and about half the soup is blended.
