As with all marinated meat, time is key to developing great flavor in your steak. Serve with a bounty of grilled seasonal vegetables to complete the meal.

Tip: If you don’t have a grill (or grilling weather), you can use your broiler with the rack set in the highest position.

Ingredients

Marinade:

  • 1 cup plain, nonfat yogurt
  • ¼ cup chopped fresh parsley
  • 2 Tbsp. lime juice
  • 1 Tbsp. paprika
  • 1 Tbsp. minced garlic
  • ⅛ tsp. salt

Steak:

  • 4 beef eye round steaks, cut 1" thick
  • ¼ cup mayonnaise

Directions

  1. Whisk marinade ingredients together and divide in half. Place half of marinade and steak in plastic bag. Seal bag, turn steaks to coat, and refrigerate for up to 12 hours.
  2. Stir mayonnaise into remaining half of marinade. Cover and refrigerate while steak is marinating.
  3. Remove steaks from marinade and discard marinade.
  4. Heat grill to medium. Grill steaks to a minimum internal temperature of 145ºF, turning once (7-10 minutes per side). Serve hot topped with mayonnaise sauce.
