If you adore strong garlic, this simple soup is a brilliant way to use up any hearty greens you’ve got kicking around your fridge. Kale, cabbage and mustard greens would all make ideal alternatives for collards. If you’ve got greens to use up but are less of a garlic fan, take the amount down to 1-2 cloves.

Ingredients

  • 1 Tbsp. olive oil
  • 1 small onion, diced
  • 5-6 cloves of garlic, minced
  • ⅓ cup French lentils
  • 1 medium sweet potato, peeled and diced
  • 5 cups low-sodium vegetable broth
  • 4-5 cups collard greens, chopped
  • juice of ½ a lemon

Directions

  1. Heat oil in a large, heavy-bottomed pot over medium heat. Add onions and sauté until soft. Add garlic and sauté until fragrant. Stir in lentils and sweet potato.
  2. Add broth and bring to a boil, stirring occasionally. Reduce heat to a simmer and cook until the sweet potatoes and lentils are soft, about 15 minutes.
  3. Add greens and lemon juice; adjust seasoning to taste, and serve hot.
