Eating fresh fruit is a tasty way to hydrate and replenish potassium, calcium and magnesium. Honey, lemon juice, vanilla and ginger combine for a delightful dressing for fruit. Enjoy this refreshing salad as a dessert for picnics, potlucks, barbecues and brunches.

Ingredients

Dressing:

  • 3 Tbsp. honey
  • 2 Tbsp. lemon juice
  • ¼ tsp. ground ginger
  • 1 tsp. vanilla extract
  • ¾ cup lowfat plain greek yogurt

Salad:

  • 2 cups cubed melon (such as cantaloupe or honeydew)
  • 1 cup seedless red grapes, halved
  • 1 pint strawberries, halved

Directions

  1. For the dressing, mix honey, lemon juice, ginger, vanilla and yogurt in small bowl until well blended.
  2. Place fruit in large serving bowl. Add dressing; toss gently to coat. Cover.
  3. Refrigerate at least 1 hour or until ready to serve.
