Treat yourself to a little something sweet! If strawberries and pistachios aren’t your favorite combination, or if strawberries aren’t at their peak, get creative! Try blueberries and walnuts, swapping the honey with maple syrup. How about pineapple and macadamia nuts with banana puree replacing half of the honey? Your imagination is the only limit here.

Ingredients

  • 2 cups plain Greek yogurt
  • 3 Tbsp. honey
  • 2 tsp. vanilla extract
  • ⅛ tsp. salt
  • 2 cups strawberries, diced
  • 1 cup pistachios, toasted

Directions

  1. Line a rimmed baking sheet with aluminum foil or parchment paper.
  2. Whisk together the yogurt, honey, vanilla, and salt. Pour onto the baking sheet and spread into an even layer about 1/2-inch thick.
  3. Scatter the strawberries and nuts evenly over the yogurt, pressing them in lightly.
  4. Freeze uncovered until solid, about 4 hours. Cut into bite-sized pieces. Store in an airtight bag in the freezer.
