Artichoke is a great ingredient for giving a half-scratch pasta recipe a little boost in flavor and elegance, as in this dead-simple and dead-delicious weeknight dinner.


  • 12 oz. farfalle pasta
  • 2 Tbsp. olive oil
  • 1½ lb. boneless, skinless chicken breast, cut into bite-sized pieces
  • 4 cloves garlic, minced
  • ½ cup white wine
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • 2 (15 oz.) cans artichoke quarters, rinsed, drained, and finely chopped
  • ½ cup grated parmesan cheese
  • ⅓ cup finely chopped fresh basil


  1. Cook pasta according to package directions.
  2. Heat oil in a large skillet over medium-high heat. Add chicken to pan and sauté until browned (2 minutes).
  3. Add garlic. Sauté until fragrant (1 minute).
  4. Add wine, salt, pepper, and artichokes. Simmer until sauce is thickened and chicken is cooked through (5 minutes).
  5. Remove from heat. Stir in cheese and basil.
  6. Place sauce and pasta in a large bowl. Stir gently to combine. Garnish with additional chopped basil, if desired.
