Make your lunch vegetarian, delicious, and filling with this bean salad as a sandwich filling. If you don’t have fresh pitas on hand, you can use any whole grain bread.

Ingredients

  • 1 (15 oz.) can no-salt-added chickpeas, drained and rinsed, smashed
  • ½ cup nonfat, plain Greek yogurt
  • ½ tsp. garlic powder
  • ¼ tsp. salt
  • 2 tsp. Sriracha sauce
  • 1 Tbsp. lemon juice
  • ⅔ cup shelled edamame
  • 1 green onion, chopped
  • 1 large celery stalk, chopped
  • 2 Tbsp. sun-dried tomatoes, chopped
  • 2 cups lettuce, torn
  • 4 whole wheat pitas

Directions

  1. Combine all ingredients except for lettuce and pitas. Stir to combine.
  2. Divide lettuce and salad between pitas.
