Perfectly crispy fries seasoned with an excellent blend of spices stand on their own, without need of condiments that might bring more sugar or salt to the table than you care to invite. The spice mix in this approach to fries makes it easy to appreciate a well-done fry, unadorned.

Ingredients

  • 2 lbs. potatoes
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • ¼ tsp. salt
  • 1 tsp. white pepper
  • ¼ tsp. allspice
  • 1 tsp. red pepper flakes
  • 1 Tbsp. vegetable oil

Directions

  1. Scrub potatoes and cut into ½” strips. Soak in ice water for 1 hour. Drain and pat dry.
  2. Preheat oven to 475ºF.
  3. Combine garlic powder, onion powder, salt, white pepper, allspice, and pepper flakes in plastic bag. Toss potatoes in spice mixture to coat.
  4. Place potatoes in nonstick shallow baking pan and brush with oil.
  5. Cover with foil and bake until just cooked (15 minutes). Remove foil and continue baking uncovered until golden brown (15-20 minutes), flipping fries halfway through.
