A few servings of this salad make a perfect for a light lunch all on its own. It also makes a fantastic vegetarian offering at any picnic or barbecue.



  • 3 Tbsp. olive oil
  • 2 Tbsp. lemon juice
  • 1 tsp. oregano
  • Pepper to taste


  • 4 cups peeled and diced cucumbers
  • 1 (14 oz.) can black-eyed peas, drained and rinsed
  • ⅔ cup diced bell pepper
  • 2 Tbsp. chopped black olives
  • ¼ cup sliced red onion
  • ½ cup crumbled feta cheese


  1. Whisk together dressing ingredients.
  2. Combine salad ingredients and toss with dressing to coat. This can be made 2-3 days ahead.
