Oven-fried chicken is a delicious treat, and worth the work. This dish is perfect for a slow weekend dinner. Use the leftovers to top salads or make sandwiches later in the week.

Ingredients

  • ½ cup skim milk
  • 1 tsp. poultry seasoning, divided
  • 1½ Tbsp. onion powder
  • 1½ Tbsp. garlic powder
  • 2 tsp. pepper
  • ¼ tsp. salt
  • 2 tsp. crushed red pepper flakes
  • 1 tsp. ginger
  • 1 cup crumbled corn flakes
  • 4 chicken breasts
  • 4 chicken drumsticks
  • Paprika to taste
  • 1 tsp. vegetable oil

Directions

  1. Preheat oven to 350ºF.
  2. Whisk together milk and ½ teaspoon of poultry seasoning.
  3. Combine all other spices with cornflakes and place in plastic bag.
  4. Wash chicken and pat dry. Dip chicken into milk then shake in bag with seasoning and crumbs.
  5. Refrigerate for 1 hour.
  6. Remove from refrigerator and sprinkle lightly with paprika for color.
  7. Place chicken on a greased baking pan.
  8. Cover with foil and bake for 40 minutes. Remove foil and continue baking until chicken breasts reach a minimum internal temperature of 165ºF (30-40 minutes).
