Couscous is a great textural element to build a salad around, providing a simple, easily dressed base that pairs flexibly with your favorite veggies and dried fruits. This side is an especially excellent option for summer cookouts.

Tip: If you don’t have currants in the cupboard, use whatever unsweetened dried fruit you have on hand. Raisins or chopped, dried apricots work beautifully.

Ingredients

Dressing:

  • 1 Tbsp. balsamic vinegar
  • 2 Tbsp. seasoned rice vinegar
  • 1 tsp. sesame oil
  • 1 tsp. reduced-sodium soy sauce
  • 1 tsp. Dijon mustard
  • 1 tsp. curry powder

Salad:

  • 1 cup couscous
  • ½ cup green peas
  • ½ cup shredded red cabbage
  • 1 carrot, grated
  • 1 red bell pepper, seeded and diced
  • ½ red onion, finely chopped
  • ½ cup currants

Directions

  1. Whisk together dressing ingredients and set aside.
  2. Prepare couscous according to package directions.
  3. Toss couscous with remaining salad ingredients and dressing to serve.
