Ingredients

Dressing:

  • 2 Tbsp. olive oil
  • 2 Tbsp. orange juice
  • 1 Tbsp. cider vinegar
  • 2 tsp. finely chopped shallots
  • ¼ tsp. pepper
  • ¼ tsp. salt

Salad:

  • 2 cups cooked whole-wheat couscous
  • 1 cup mixed fresh berries
  • 1 cup chopped nectarine
  • 2 Tbsp. toasted sliced almonds

Directions

  1. Whisk dressing ingredients together in a large bowl.
  2. Add salad ingredients and toss to combine.
