Corn and tomato salads are a classic option for summer picnics and cookouts. Adding quinoa provides added protein and fiber for a more filling dish.



  • 1 cup quinoa
  • 1 cup corn
  • 1 cup halved cherry tomatoes
  • ¼ cup finely chopped fresh parsley


  • 1 Tbsp. olive oil
  • 3 Tbsp. lime juice
  • 2 Tbsp. white wine vinegar
  • ¼ tsp. salt
  • 1 clove garlic, minced


  1. Cook quinoa according to package directions.
  2. Toss all salad ingredients together.
  3. Whisk together dressing ingredients. Toss with salad to coat. Serve warm or chilled.
