Coco Rice with Green Onions - 1 Guiding Stars

Rice alone is a charming grain base for a wide variety of dishes. Many of those dishes, such as curry, would pair magnificently with this easy and elegant spin that adds coconut for sweet nuttiness and turmeric for color and zing.

Ingredients

  • 2 tsp. canola or olive oil
  • 1 cup chopped yellow onion
  • 1 cup basmati rice
  • ¼ tsp. ground turmeric
  • ¼ cup flaked, unsweetened coconut
  • 1½ cups fat-free, low sodium vegetable broth
  • ½ cup water
  • ¼ tsp. kosher salt
  • ⅛ tsp. freshly ground black pepper
  • ¼ cup chopped green onions

Directions

  1. Heat oil in a medium sauce pot over medium-high heat.
  2. Add onion; sauté until tender, stirring constantly (2 minutes).
  3. Add rice and turmeric; sauté until rice becomes yellow.
  4. Stir in unsweetened coconut.
  5. Add broth and 1/2 cup water; bring to a boil. Reduce heat to low, and season with salt and pepper. Cover and simmer until tender (20 minutes).
  6. Turn off heat, uncover, and let stand (5 minutes). Fluff with a fork. Stir in green onions, and serve.
