Cabbage soup is inexpensive and hearty. For a more flavorful soup, add more garlic or onions to suit your tastes. Experiment with adding a few fresh herbs or carrots as well—whatever you have in your fridge.

Ingredients

  • 1 tablespoon olive oil
  • 1/4 teaspoon salt
  • 1/2 pound potatoes, skin on, cubed
  • 4 cloves garlic, minced
  • 1/2 large onion, thinly sliced
  • 5 cups low-sodium vegetable stock
  • 1 1/2 cups white beans, cooked
  • 1/2 medium cabbage, cored and finely shredded

Directions

  1. Warm the olive oil in a large thick-bottomed pot. Add the salt and potatoes. Cover and cook until  tender and browning.
  2. Stir in the garlic and onion and cook until soft.
  3. Add the stock and the beans and bring the pot to a simmer. Stir in the cabbage and cook until the cabbage is almost soft. Serve warm.
