Marinating is a brilliant way to add flavor to any protein, but it’s especially magical with the sponge-like texture of tofu, which soaks up the sauce gorgeously. Serve this easy dish over brown rice or with whole-grain tortillas as a fajita filling.

Ingredients

Marinated Tofu:

  • ¼ cup chopped fresh cilantro
  • ⅔ cup lime juice
  • ¼ cup minced garlic
  • 3 tsp. cumin
  • ½ tsp. smoked paprika
  • ⅛ tsp. salt
  • ¼ tsp. pepper
  • 1 lb. extra-firm tofu, sliced into ½" pieces

Sauce:

  • ¼ cup chopped fresh cilantro
  • 2 Tbsp. olive oil
  • 1 Tbsp. honey

Onions & Peppers:

  • 2 Tbsp. olive oil
  • 1 red onion, sliced
  • 3 bell peppers, sliced
  • ½ tsp. cumin
  • ¼ tsp. smoked paprika

Directions

  1. Toss together marinade ingredients. Combine tofu with half of the marinade in a sealable container and refrigerate (1-24 hours). Reserve remaining marinade for sauce.
  2. Preheat oven to 450°F. Line a large baking sheet with aluminum foil.
  3. Pour the remaining half of the marinade into a blender, along with sauce ingredients. Blend until smooth.
  4. In a large bowl, toss the onion and peppers with olive oil, cumin, and paprika. Drain the marinated tofu.
  5. Place onion and pepper mix on one half of the prepared baking sheet and the drained tofu on the other.
  6. Bake until vegetables are tender and the tofu is lightly browned,  stirring the vegetables and flipping the tofu halfway through (20-25 minutes).
  7. Divide tofu and vegetables onto plates and drizzle with sauce to serve.
