The salad ingredients are simple and familiar, which makes it easy to prepare. The dressing is something pretty special, bringing the dish together for a creamy, delicious treat you’ll love to make over and over.

Ingredients

Dressing:

  • ⅓ cup chopped fresh cilantro
  • ⅔ cup plain, non-fat Greek yogurt
  • 1 Tbsp. minced chipotle chili in adobo sauce
  • 1 tsp. cumin
  • 1 tsp. chili powder
  • 4 tsp. lime juice
  • ¼ tsp. salt

Salad:

  • 4 cups shredded romaine lettuce
  • 2 cups chopped cooked chicken breasts
  • 1 cup cherry tomatoes, halved
  • ½ cup diced avocado
  • ⅓ cup thinly sliced red onion
  • 1 (15 oz.) can no-salt-added black beans, rinsed and drained
  • 1 (8.75 oz.) can no-salt-added corn, rinsed and drained

Directions

  1. Puree dressing ingredients together using a food processor or blender.
  2. Combine salad ingredients in a large bowl.
  3. Toss salad with dressing to coat. Serve immediately.
