Use your favorite melon to personalize this delicious soup! If you like gazpacho, this recipe is worth a try. The photo shows a soup made with cantaloupe, but you could easily use watermelon or honeydew: whatever’s fresh and on sale! It’s also a great way to use up leftovers from a multi-melon fruit salad.

Ingredients

  • 6 cups cubed melon, divided
  • ½ cup cubed cucumber
  • 6 Tbsp. lime juice, divided
  • 1 Tbsp. thinly sliced scallion
  • 1 scallion
  • 1 jalapeño pepper, seeded
  • 1 cup cold water
  • Zest of ½ orange
  • ½ cup orange juice
  • 1 tsp. chopped fresh ginger
  • ½ tsp. salt
  • 2 Tbsp. finely chopped cilantro
  • 2 Tbsp. plain yogurt

Directions

  1. Combine 1 cup melon, cucumber, 2 tablespoons lime juice, and 1 tablespoon sliced scallion. Cover and refrigerate until ready to serve the soup.
  2. Combine remaining ingredients except yogurt and cilantro in a food processor or blender and process until smooth. Refrigerate until chilled (2 hours).
  3. Garnish each serving with diced melon mixture, cilantro, and yogurt.
