Chicken and rice is a classic dish, and this easy-peasy version is designed for you to set it up and leave it alone while you do other things. It’s an ideal meal to add to a meal prep day—just let it simmer gently on the back burner while you prep, roast, and pack your produce and protein for the week.

Tip: This is a great dish for using up leftover odds and ends of veggies or protein. Take stock of what you’ve got on hand and swap in what needs using.

Ingredients

  • 1 cup brown rice
  • 2 cups water
  • ¾ cup cubed skinless chicken breast, cooked
  • ½ cup peas
  • ¼ cup diced bell pepper
  • ¼ cup chopped green onion
  • 1 tsp. cumin
  • 1 tsp. coriander (optional)
  • 1 tsp. garlic powder
  • ¼ tsp. paprika

Directions

  1. Put all ingredients in large wide range pan and bring to a boil. Lower heat to medium, cover and cook until water is absorbed (40 minutes).
  2. Fluff with a fork and serve hot.
