Chicken, sweet potatoes, rosemary, and garlic…is your mouth watering yet? It should be. With the help of your trusty slow cooker, this rich, hearty stew could not be easier.

Ingredients

  • 6 skinless chicken thighs
  • 2 lbs. sweet potatoes, peeled and cut into spears
  • ½ lb. mushrooms, sliced
  • 6 shallots, peeled and halved
  • 4 cloves garlic, peeled
  • 1 cup dry white wine
  • 2 tsp. chopped fresh rosemary
  • 1 tsp. salt
  • ½ tsp. pepper
  • 1½ Tbsp. white wine vinegar

Directions

  1. Stir everything but vinegar into a large slow cooker.
  2. Cover and cook on low until chicken is cooked and potatoes are tender (5-6 hours).
  3. Stir in vinegar and serve hot.
