A traditional, easy meal that’s hearty and filling, this easy skillet is a perfect meal to include in a meal prep plan to used up leftover rice and chicken from a previous dinner.

Tip: If you don’t have leftover brown rice on hand, sub in instant brown rice for a speedy cook time.

Ingredients

  • 1 tsp. vegetable oil
  • 1 cup chopped onion
  • 1 clove garlic, minced
  • 1 cup diced, cooked chicken breast
  • 1 (15 oz.) can pinto beans, drained
  • 2 cups cooked brown rice
  • 1 tsp. rosemary
  • ½ tsp. thyme
  • ⅛ tsp. cayenne pepper
  • 1 cup reduced-sodium chicken broth

Directions

  1. Heat oil in large nonstick skillet over medium heat.
  2. Add onion and garlic and sauté until soft (4-5 minutes).
  3. Add remaining ingredients, cover, and cook on low heat until liquid is evaporated (5 minutes). Serve hot.
