Fried rice is a delightful dish, and it’s easier to make at home than you might realize. The trick to success is to start with cold rice, making this a perfect dish for repurposing rice leftover from last night’s meal.

Ingredients

  • 1 tsp. vegetable oil
  • 1 cup sliced green onion
  • 2 cups sliced mushrooms
  • 2 large eggs
  • 2 cooked chicken breasts, diced
  • 2 Tbsp. light soy sauce
  • 1 Tbsp. sesame oil
  • Garlic powder to taste
  • Red pepper flakes to taste
  • 4 cups cooked brown rice

Directions

  1. Heat oil in nonstick skillet over medium-high heat until hot. Sauté green onions and mushrooms until mushrooms are soft (4-5 minutes).
  2. Add the eggs and scramble (2-3 minutes).
  3. Add remaining ingredients and just enough water to prevent sticking. Stir until heated through and slightly crispy (5-8 minutes).
