Chicken, Broccoli and Cashew Stir Fry - 1 Guiding Stars

Dinner doesn’t get any quicker than stir fry, and this one will quickly become a family favorite. If you like a little extra heat, a pinch of red pepper flakes and a dash of ginger are great ways to give it a bit more zip.


  • 2 Tbsp. low-sodium soy sauce
  • 3 garlic cloves, minced
  • 1 Tbsp. brown sugar
  • 1 tsp. sesame oil
  • 1 lb. skinless chicken breast, cubed
  • ¾ cup low-sodium chicken broth, divided
  • 1 tsp. cornstarch
  • 3 cups broccoli florets
  • 1 cup cashews
  • 2 cups brown rice, cooked


  1. Whisk together the soy sauce, garlic, brown sugar and sesame oil.
  2. Add the chicken to a large skillet over medium high heat. Pour the sauce over and cook until no longer pink, 3-5 minutes.
  3. Add ½ cup chicken broth, broccoli and cashews to skillet. Cover and cook for until broccoli is tender, 3-5 minutes.
  4. Whisk ¼ cup of the broth and cornstarch together until cornstarch has dissolved. Stir mix slowly into skillet and simmer until sauce has thickened.
  5. Serve hot, over rice.
