This traditional meal is easy to prepare and scales up easily and inexpensively to feed a crowd.

Ingredients

  • 6 chicken breasts, chopped
  • 2 tsp. vegetable oil
  • 4 cups water
  • 2 tomatoes, chopped
  • ½ cup chopped green pepper
  • ¼ cup chopped red pepper
  • ¼ cup chopped celery
  • 1 carrot, grated
  • ¼ cup corn
  • ½ cup chopped onion
  • ¼ cup chopped cilantro
  • 2 cloves garlic, minced
  • ⅛ tsp. salt
  • ⅛ tsp. pepper
  • 2 cups rice
  • ½ cup peas
  • 2 oz. olives
  • ¼ cup raisins

Directions

  1. In large pot, brown chicken pieces in oil.
  2. Add water, tomatoes, green and red peppers, celery, carrots, corn, onion, cilantro, garlic, salt, and pepper. Cover and cook over medium heat until chicken is tender (20-30 minutes).
  3. Remove chicken from pot and place in refrigerator. Add rice, peas, and olives to pot. Cover pot and cook on low until rice is cooked (20 minutes).
  4. Stir in the chicken and raisins and cook until raisins are plump and chicken is warm (5-8 minutes).
