Classic tamales are corn dough rolls stuffed with seasoned meat and vegetables and steamed in corn husks. If you love their flavor but want a simpler method of preparation, this is your dish. Swapping in the classic tamale dough for pie crust, this easy casserole is a family treat you’ll always find time to make.

Ingredients

Crust:

  • 5¼ cups 98% fat-free, low-sodium chicken broth
  • 2¼ cups cornmeal
  • 1 tsp. cumin
  • ¼ tsp. cayenne pepper

Filling:

  • 2 Tbsp. golden raisins
  • 2 Tbsp. apple juice
  • 1½ lb. boneless skinless chicken breasts, cubed
  • 1 cup corn
  • 1 onion, chopped
  • 1 medium tomato, chopped
  • 2 tomatillos, husked and chopped
  • 2 jalapeño peppers, minced
  • 2 cloves garlic, minced
  • 1 Tbsp. chili powder
  • ½ tsp. cumin
  • 1 tsp. oregano
  • ¼ cup shredded reduced-fat Monterey Jack cheese

Directions

  1. Set raisins to soak in apple juice.
  2. Preheat oven to 450ºF. Coat a 10″ pie pan with cooking spray.
  3. In a large saucepan, bring chicken broth to a boil over medium-high heat. Gradually stir in cornmeal, cumin, and cayenne. Reduce heat to medium and cook, stirring constantly, until thickened (10-12 minutes). Spread mixture evenly along bottom and sides of pie pan to form a crust.
  4. Coat a large skillet with cooking spray. Place over medium-high heat. Add chicken and sauté until brown on all sides (5 minutes). Stir in remaining ingredients, including raisins with their liquid.
  5. Spoon mixture into prepared casserole and bake until crust is golden and filling is bubbling (25-30 minutes). Let stand at least 10 minutes at room temperature before slicing to serve.
