These lightly spiced cauliflower and potato patties can be enjoyed as a side dish with a curry. They also work as a burger on toasted whole-grain buns, heaped with your favorite veggies.

Tip: These are easiest to make if you have a leftover potato on hand, but if you don’t, you can prick one in several places with a fork and microwave until soft, turning every 2-3 minutes (6 minutes).

Ingredients

  • 1 medium tomato, chopped
  • 2 cloves garlic, minced
  • ½" piece of fresh ginger
  • ½ cup oats
  • ½ head cauliflower, grated
  • 1 large potato, cooked and mashed
  • ¼ cup chopped onion
  • 4 Tbsp. cilantro, minced
  • ¾ tsp. salt
  • ½ tsp. garam masala
  • 1 tsp. whole coriander seeds
  • ½ green chili, finely chopped

Directions

  1. Preheat oven to 350ºF.
  2. Mash tomato, garlic, and ginger into a fine paste.
  3. Grind oats to a coarse meal in a food processor or blender.
  4. Mix all ingredients together. Shape into patties.
  5. Place patties on parchment-lined baking sheet until browned on both sides, carefully flipping halfway through (40 minutes).
