You can roast your garlic and cauliflower together on the same pan–they will take roughly the same amount of time. Mix up the color by playing with the different types of cauliflower available in most major grocery stores.

Ingredients

  • 1 head garlic, roasted and peeled
  • 5 T. olive oil
  • 1 cauliflower, cut into florets and roasted
  • 1/2 t. fine sea salt
  • 3 T. lemon juice
  • Freshly ground black pepper
  • Lemon wedges, for serving

Directions

  1. Add all ingredients except lemon wedges to a food processor. Blend until smooth.
  2. Serve with fresh pita bread and garnish with lemon wedges.
