Thinking onions aren’t enough to give an appetizer amazing flavor? Think again. Caramelize these onions just right and your guests won’t even care if you decide to skip the olives.

Tip: If you’re in a rush, you can caramelize onions faster by turning up the heat, but the best flavor comes from letting the cooking process take its time over low heat.

Ingredients

  • 3 Tbsp. olive oil, divided
  • 1 large onion, sliced
  • 1 sprig fresh thyme
  • Pepper to taste
  • ½ loaf French Bread, sliced into 12 pieces
  • 2 cloves garlic
  • 6 olives, pitted and halved

Directions

  1. Heat 1 Tablespoon of olive oil in a skillet over medium-low heat. Add the onion, thyme, and pepper. Cook until the onions soft and well caramelized, stirring regularly (1 hour). Remove the sprig of thyme.
  2. Toast the bread on both sides under the broiler (1 minute per side).
  3. While the toasted slices are still warm, rub them with garlic and drizzle them with the remaining oil on one side.
  4. Place a dollop of the caramelized onions on each slice of bruschetta and top with half an olive.
