Cabbage rolls, a traditional dish of rice and ground meat wrapped in cabbage and cooked in tomato sauce, are delicious. Rolling the stuffing and allowing the rice to cook, however, is a process that makes them a special occasion dish. This speedy skillet offers all the flavor of a cabbage roll without all the trouble of rolling.

Tip: If you prefer not to work with leftover rice, use quick-cooking brown rice and make it fresh while the vegetables are cooking.

Ingredients

  • 1 tsp. olive oil
  • 1 small onion, chopped
  • 2 cloves garlic, chopped
  • ¾ lb. extra-lean ground turkey
  • ½ head cabbage, coarsely chopped
  • 1 (14 oz.) can crushed tomatoes
  • 1 Tbsp. tomato paste
  • 3 cups cooked brown rice

Directions

  1. Heat oil in a large skillet over medium heat. Sauté onion and garlic until onion is soft (6-8 minutes).
  2. Add turkey and brown, breaking up as needed (5-6 minutes). Drain fat. Stir in tomatoes, tomato paste, and cabbage.
  3. Cover and simmer until cabbage is soft, stirring occasionally (5-6 minutes). Stir in rice and heat through (4-5 minutes). Serve hot.
